Lemon Ginger Scones

Makes 4 mini scones

Enjoy these delightful mini scones with a zesty kick of lemon and the warming spice of ginger. Perfect for a cosy morning tea or a treat with friends.

Ingredients

Scones

  • 3/4 cup flour
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1 tbsp fresh lemon zest
  • 1/4 cup Greek yoghurt
  • 2 tbsp cold butter
  • 150ml Daily Good Fiji Ginger Immunity Shot
  • 1 tbsp honey or maple syrup

For Brushing

  • Egg wash or soy milk (to keep vegan-friendly)

Method

  1. Preheat the oven to 175°C.
  2. Whisk together the flour, baking powder, salt, cold butter, and lemon zest. Use the back of a fork to combine until the mixture resembles fine crumbs.
  3. Add Greek yoghurt, honey or maple syrup, and Daily Good Fiji Ginger Immunity Shots. Stir gently until just combined.
  4. Using a 1/4 cup as a mould, shape the dough into small circles. Place them on a lined baking tray and brush the tops with egg wash or soy milk.
  5. Bake for 12-15 minutes, or until the tops are lightly golden. Cool on the tray for 5 minutes, then transfer to a wire rack.
  6. Best served warm with your favourite spread or a dollop of clotted cream.
