Spice Up Your Day with a Gingerbread Cheesecake Parfait!

Indulge in the warm, spiced flavours of gingerbread with this wholesome, layered parfait—a delightful choice for a festive breakfast, snack, or dessert!

Ingredients

Gingerbread Cookies:
- 1/2 cup whey protein or almond meal
- 1 tsp ground ginger
- 1/4 cup nut butter
- 50ml Daily Good Fiji Ginger
- 1 tbsp honey or maple syrup

Ginger Yoghurt:
- 1 cup Greek yoghurt
- 50ml Daily Good Fiji Ginger

Parfait Layers
- Ginger yoghurt
- Gingerbread cookie crumbles
- Fresh berries
- Granola

Method

1. Make the Gingerbread Cookies
- Combine whey protein (or almond meal), ground ginger, nut butter, Daily Good Fiji Ginger, and honey/maple syrup into a dough.
- Shape into 4 round cookies and bake at 175°C for 10 minutes. Let cool, then crumble.

2. Prepare the Ginger Yoghurt
- Mix Greek yoghurt with Daily Good Fiji Ginger until smooth.

3. Assemble the Parfait
- In a glass or jar, layer the ginger yoghurt, cookie crumbles, fresh berries, and granola. Repeat layers as desired.
- Top with a final crumble of gingerbread cookie and a sprinkle of berries for garnish.
